Mango and Passionfruit smoothie- dairy free breakfast goodness
I thought I'd follow up my last post by sharing a smoothie the kids and I are loving at the moment- a delicious summery golden glass of goodness.
What you'll need:
1.5 cups frozen mango
1 cup Almond milk (or whatever milk you like)
3/4 cup coconut yoghurt or kefir (we use a vanilla one)
3-6 egg yolks
1 tsp vanilla extract
6 broth ice cubes
2 passion fruit (pulp only)
Stevia or raw honey to taste (Optional depending how sweet your fruit is and your preferences)
Place all ingredients except for the passion fruit into a blender or food processor. Blend until smooth. Add the passion fruit pulp and stir through or blend again at a lower speed if you have the option. You can add it at the start if you don't mind your passion fruit seeds being broken up into small pieces and a grittier textured smoothie.
Pour into glasses or a thermos if you're on the run and enjoy.
A few extra notes:
I find smoothies an awesome place to add our probiotics and prebiotics too- they blend in undetected and simplify our morning routine.
Feel free to omit the egg yolks and serve with a little added protein on the side instead
Fortify your smoothie further with turmeric, ginger, a little nut butter etc as desired
